A Middle Eastern classic!
1 head organic cauliflower
1 pint organic cherry tomatoes, halved or quartered
1 organic cucumber, peeled, seeded, and diced
1/2 organic red onion, minced
1 cup organic minced carrot tops or parsley
1/2 cup organic minced mint
4 Tbsp. organic lemon juice (juice from 2 lemons)
1 tsp. Boykins Apiaries Honey
3-4 Tbsp. Riojana Olive Oil
Salt and Pepper to taste
Step 1
Cut your cauliflower in half and remove the core.
Step 2
Add your cauliflower pieces to a food processor and process for a couple of seconds. Remove cauliflower and add to a bowl. You will have to do a few of these in order to get it all done.
Step 3
In a small bowl mix your lemon juice, honey, olive oil, a pinch of sugar, salt and pepper. Mix to combine.
Step 4
Add your cherry tomatoes, cucumber, red onion, carrot tops, and mint to the cauliflower. Gently combine.
Step 5
Allow to marinate for at least 15 minutes before serving.
