Jalepeno Peach Blueberry Crumble

A spicy and sweet summer treat you don't want to miss out on!

Ingredients

2 lbs fresh organic peaches, sliced

½ C Wholesome brown sugar

2 C organic blueberries

1 organic jalapeno, seeds removed, diced

1 Tbsp. organic lemon juice

1 tsp. Frontier Co-op vanilla

1 Tbsp. Let’s Do Organic cornstarch

1 tsp. Frontier Co-op ginger

½ tsp. Frontier Co-op cinnamon

½ tsp. Frontier Co-op cardamom

½ tsp. kosher salt

Crumble

1 C War Eagle Mill all-purpose flour

½ C bulk rolled oats

½ C Wholesome brown sugar

½ tsp. Frontier Co-op ginger

½ tsp. Frontier Co-op cinnamon

½ tsp. Frontier Co-op cardamom

½ tsp. kosher salt

8 Tbsp. frozen Organic Valley butter, grated on a cheese grater

Preparation

Step 1

Preheat oven to 375.

Step 2

In a bowl, toss the peach slices and sugar together. Allow to stand for 30 minutes.

Step 3

Add your blueberries, jalapeno, lemon juice, and vanilla.

Step 4

In a small bowl, add your cornstarch, ginger, cinnamon, cardamom, and salt. Whisk to combine.

Step 5

Pour the dry mixture over the fruit, gently toss to combine.

Step 6

Transfer to a 2 quart baking dish.

Step 7

To make your crumble, whisk together everything from the all-purpose flour to the salt. Add the grated frozen butter to the mixture and quickly toss to coat the butter with the dry mixture using your hands.

Step 8

Sprinkle over fruit.

Step 9

Bake for 30-45 minutes. Allow to cool for 15 minutes and enjoy with your favorite ice cream!
